Approaches to Properly Cleaning a Bakery

Think about it. Every day you put food in your mouth, trusting that whoever may have produced and delivered it did so with our health and safety in mind. In food production, it is essential to the safety and wellbeing of both your employees and your customers that you ensure all aspects of production are properly cleaned of allergens and sanitized regularly. Air

When it comes to keeping your production line sanitary, you must monitor all surfaces for airborne allergens. The main culprits survive in a factory environment and thrive in hard-to-reach spots. Especially when working with seeds and toppings, food crumbs can end up where food crumbs should never be…so, keeping all nooks and crannies free of this kind of clutter is the first step to a clean bakery. We suggest initially working with high pressured air to blow all debris out of their corners without moving the issue to the water drains. This is also extremely effective in cleaning baking equipment and pans, as the air clears dirt and crumbs without damaging the material.

Water

You guessed it. After clearing all dry allergens from your bakery floor, it is time for the power washer to do its job. Here at Pan-O-Gold Baking Company, we aren’t afraid to get a little bit wet in the name of a sanitary bakery! By using an effective mixture of hot water (and I mean hot) and cleaning detergent, we begin by cleaning all potentially harmful bacteria that could be growing in your production line. It is very important to clear away any water and dry all surfaces to prevent any mold or bacteria from growing.

Fire

Remember when I mentioned using HOT water? Well, I wasn’t kidding. A mixture of heat, pressure, and water are the magic ingredients to keeping any surface sanitized and free of allergens. According to the World Health Organization (WHO), boiling water or other forms of heat are extremely effective in killing bacteria, viruses, and protozoa, which if left unchecked, wreak havoc on your production line. This is also the best way to ensure the inside of your ovens and other baking equipment are sanitary. To keep your baking ovens clean and free of grease and debris, we suggest turning the oven on to approximately 150 degrees Fahrenheit to kill bacteria. Then, use sanitation products once partially cooled for a deeper clean.
